Vanishing Oatmeal Chocolate Chip Cookies

2 cubes butter
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 cups quick oatmeal
1 cup chocolate chips

1. Heat oven to 350.
2. Beat together butter and sugars until creamy.
3. Add eggs and vanilla. Beat well.
4. Add flour, soda, cinnamon and salt. Mix well.
5. Stir in oats and chocolate chips. Mix well.
6. Roll into tablespoon size balls. Place on ungreased cookie sheet.
7. Bake 8-10 minutes or until golden brown.
8. Let sit on cookie sheet 1 minute then remove to wire cooling rack.

No Bake Cookies

2 cubes butter
1 cup milk
4 cups sugar
2/3 cup cocoa
4 tsp. vanilla
6 cups quick oatmeal

*Take 2 cubes of softened butter and rub all over sides of pan- only use a little bit for bottom of pan. Add:

1 cup milk
4 cups sugar
2/3 cup cocoa- sifted

*Turn heat to medium low. Mix ingredients together, avoiding sides of the pan, using a wooden spoon. After all mixed together, use a wire whisk to stir. Stirring constantly, bring to a full, rolling boil for 1 minute and 15 seconds.

*Remove from heat. Stir in 4 tsp vanilla. Add 6 cups quick oatmeal. Toss lightly- don't over mix. Let sit for a few minutes to let oatmeal absorb chocolate. Use a cookie scoop and drop onto wax paper.
